It can be quite difficult for some of us to incorporate raw food into our diets, but all this sun we've been having calls for something light, fresh and quick like this easy spring salad.
Handful of radishes
Handful of cherry tomatoes, halved
½ bunch of coriander
2 tsp sumac
½ head of your favourite lettuce, torn
1 red onion
½ spring onion, sliced
1 clove garlic, minced
¼ cup crushed walnuts
juice of 1 lemon
Drizzle of olive oil
Sea salt and pepper to taste
Finely chop the coriander and mix with lemon juice, olive oil, garlic, spring onion and sumac in a large mixing bowl.
Thinly slice the cucumber, radishes, onion and mix with the coriander dressing.
Add the walnuts, lettuce and tomatoes and stir until coated with the dressing.
Enjoy as is or top with some houmous for a more filling meal!
