cauliflower is truly the GOAT. here i've roasted it whole with a harissa inspired rub and served with pomegranate, coconut yoghurt and fresh coriander. it's crispy on the outside, melt in your mouth delicious on the inside.

ingredients:
1 cauliflower
1 red pepper
1 red onion
5 tbsp vegan yoghurt
1 tbsp chilli oil (optional)
1 tbsp nutritional yeast
1 whole bulb garlic
1 red chilli
1 tbsp smoked paprika
1 tsp cumin
1 tsp garam masala
handful of fresh coriander
1 tsp caraway seeds
3 tbsp water or veg stock
1/4 cup pomegranate seeds
sea salt and black pepper
method:
preheat the oven to 200C.
roughly chop the red pepper and red onion.
add to a tray with half the garlic cloves (skin still on), the red chilli, a drizzle of oil and salt and pepper. roast for 10 minutes until starting to char.
blend together the roasted veg (peel the garlic first), spices, nutritional yeast, chilli oil, 3 tbsp yoghurt, the fresh coriander (save some leaves for garnish) and the water or veg stock.
remove the cauliflower stalk, leaving a shallow hole at the bottom of the cauliflower.
pour the pepper paste over the cauliflower and rub making sure it's completely covered.
fill the shallow hole with the remaining garlic (peeled)and more pepper paste. store any remaining paste in the fridge and use within a week.
cover with foil and roast for 30 minutes.
after 30 minutes remove the foil and return to the oven for another 10 minutes to crisp.
serve topped with the remaining vegan yoghurt, pomegranate seeds, fresh coriander leaves and black pepper,
