plantain and sweet potato soup

the first recipe from my saturday soup series! super filling, fresh and fragrant.

serves 5

ingredients:

1 ripe plantain

2 large sweet potatoes

1 carrot

750ml water or veg stock

1 celery stick

1 onion

3 garlic cloves, crushed

1 inch ginger root, grated

1 scotch bonnet (or 1 tsp chilli powder)

1/2 tsp cayenne pepper

1/2 tsp pimento (allspice)

1/2 tsp thyme

1/2 tsp cumin

1/2 tsp turmeric

2 bay leaves

oil for frying (i use grapeseed oil)

salt and pepper

to garnish: (optional)

cashew cream:

1/2 cup cashews soaked in water

1 tbsp lemon juice

1/2 cup water

1 tbsp nutritional yeast

salt and pepper

raw kale chips:

3tbsp dulse flakes (or any seaweed,

can omit if you can't find any)

1/2 bag of kale

1 tsp oil (i use olive oil)

1/2 lemon

salt and pepper

nutmeg to garnish

method:

1. preheat the oven to gas mark 6/200°C

2. roughly chop the sweet potato into large chunks. i keep the skin on but you can peel and discard if you prefer.

3. season with salt and pepper, drizzle with oil and roast in oven for 25-30 minutes.

4. roughly chop the onion, carrot and celery.

5. fry in oil on a low heat until lightly brown and fragrant.

6. add the garlic, ginger and remaining herbs and spices. fry for 30 seconds until fragrant and cover with the veg stock or water. leave to simmer for a low heat until the sweet potatoes are ready.

7. while your stock simmers, place all the cashew cream ingredients into a blender and blend until smooth. it should be single cream consistency. refrigerate until needed.

8. add all the ingredients for the kale chips into a large bowl. with clean hands (!), massage (yes, massage...) the kale for about 2 minutes. this breaks down the toughness of the kale and makes it soft and melt in your mouth. refrigerate until needed.

9. add the sweet potatoes to the stock mixture and simmer for 10 minutes.

10. blend the soup. if it's too thick, add more water or stock for a lighter soup.

11. top the soup with a handful of kale and a dollop of cashew cream. finish with a sprinkle of nutmeg.
